Chicken Parmigiana


After making stuffed chicken on Sunday, Monday afternoon I still had 2 whole chicken breasts to cook. These things are massive. I mean, what the heck are they feeding chickens? The breasts are bigger than mine, haha! Anyway, I had chicken, canned tomatoes, leftover mozzarella cheese, and the makings for an amazing Italian meal.

Cheesy Chicken & Broccoli Bake



This was a recipe I threw together a couple of weeks ago. We literally had frozen broccoli, chicken, cheddar cheese, one potato and that was it! I wanted to make a meal without needing to spend more at the grocery store. I think pretty much everyone loves broccoli in their macaroni and cheese (homemade, of course) and chicken and broccoli are also a great combo. To top it off, mashed potatoes and cheese are epic! Here is a quick and easy recipe for a delicious casserole.

Bacon and Mozzarella Stuffed Chicken




A couple of weeks ago hubby and I went to Buca di Beppo for dinner. We ordered the small portion of Prosciutto Stuffed Chicken, it was beyond amazing! I had my bestie visit over the weekend and I wanted to cook something special for her. We decided on chicken, and tried our best to recreate what the restaurant had.

Cashew and Peanut Fried Tofu



I had mentioned a couple weeks ago that I ate at Siam Best up in LA and it was beyond amazing. My sister J. and I shared cashew nut tofu and garlicky broccoli. I had been wanting to replicate the dish for weeks now and I think I nailed something similar! My ingredient list is totally lame and I didn't measure every single thing but the sauce is super simple and frying tofu is a breeze.

Tomato, Basil, Capers & Cream Cheese Bruschetta



Hubby and I had friends over on Sunday night and I had a craving for bruschetta. I looked in the fridge, saw that we had cream cheese (whipped), tomatoes, canned tomatoes, capers, and that was it. We went down to the store and got bread, basil, a red bell pepper and started thinking.

Tricolor Lemon Yogurt Pie


As the Easter bunny approaches nearly everyone gets a hankering for something sweet and satisfying. I remember this pie from my childhood, and I also remember my grandmother making jello parfaits when we'd come to visit. My sister and I would swim for what felt like hours at the pool, diving for rings, gulping down chlorinated water, me complaining about my ears hurting, both of us trying to avoid a sunburn, and then finishing the day with cold sandwiches and jello parfaits.

Cheddar Bacon Pancakes


This meal was inspired from the S & W Country Diner where I had breakfast with my sister. She said the "bacon and cheddar waffles" were to die for. I was game, so we gave it a shot. We also ordered a side of hash browns (J loves them), a fried egg for each of us, and a side of tomato slices. We had to get a little healthy color going on the plates ;-)

Taco Pasta, adapted from Rachael Ray


I was watching Rachael Ray's show on ABC the other day and she made something that really caught my eye! One of my favorite meals as a kid was crunchy homemade tacos. While my mom was browning and spicing up the meat, I remember sneaking in and snacking on it. Rachael made a "Taco Pasta Toss," it's basically all the flavorings you would do for tacos but you dump the shells and tortillas and toss in pasta. I never would have thought to combine Mexican and Italian flavors. They're a match made in heaven!
