I am beyond relieved it's almost Friday. This week has been eventful, and I'm exhausted! I didn't get a chance to eat dinner until 10 pm today. Totally crazy, but it was worth the wait!

Tofu and Avocado "Sandwich"


Hello again! Two food posts in one day, yay for me finally getting my a$$ into gear! Tonight's dinner was a very quick and simple vegetarian "sandwich." I quote sandwich because there isn't actually bread involved. You'll see what I mean. If you're ready to make a delicious Asian inspired tofu and avocado concoction then get your frying pan ready and heat up some oil!

Pasta with Prosciutto and Brussels Sprouts




I know, you're thinking seriously more pork? This is beyond weird for me to cook with. Trust me! The thing about prosciutto is the thinly sliced pieces are much lighter than thick strips of bacon, and it's incredibly easy to trim most of the fat off. For this recipe, you want to choose a pasta and get some water boiling!

Peas and Prosciutto Pasta with Onion




I used a different kind of pasta than I had wanted, I think this would be awesome wish bow tie pasta or fiori or campanelle, but it works. Use what you have, just make sure it's a short-cut pasta! So I was bummed about the prosciutto because I like to lay it on top of the dish. I think it's much prettier, and for whatever reason meat usually tastes better (to me anyway) when it's in your face, not hidden in the food. Unless it's lasagna, okay but anyway .  .  . This dish is SO simple to make, this will be lunch for us today since I made it last night.
