Easy Peasy Fish Tacos

I try to shop at Fresh n Easy because it's cheap fast and they offer a good selection of products. I saw a pack of Parmesan and herb crusted tilapia for about $4 and I thought that would be delicious over a green salad. It made a great low-cal lunch. The next day I still had the other fillet hanging out in the fridge so I decided to try doing fish tacos since I had a nice array of ingredients. If you have fish, tortillas, and any kind of topping like cheese, greens, or a nice sauce then these are for you.



Fish Tacos
  • 1 fillet of tilapia or another white fish
  • 2 tortillas
  • salad greens or coleslaw veggies
  • sprinkle of cheese, shredded
  • sprinkle of cayenne pepper
Mayo Sauce
  • 2 tablespoons light mayonnaise
  • 1 tablespoon chopped scallions
  • 1 teaspoon parsley, fresh
  • 1 teaspoon chopped jalapeno, jarred
Preparation & Cooking Instructions

These are so easy to put together, what takes the longest is the fish. Preheat canola oil in a skillet that has a fitted lid. Cook the tilapia over medium-low heat for about 5 minutes per side, or however long it takes to brown up and crisp without burning. I do the first side without the lid, then flip it to cook the other side and pop the lid on. Doing it without the lid could take too long to cook and the fish could burn. To make the sauce simply combine all the ingredients (mayo-jalapenos) in a bowl and let it sit while you do everything else. To assemble your tacos (which were really more like XL burritos for us) zap them in the microwave for 10 seconds and then immediately sprinkle the tortilla with a little cheese. Cut the fillet in half and top the cheese with the fish, then top the fish with some salad mix, the white sauce, and finally a sprinkle of cayenne pepper if you like your food HOT! Tarter sauce would also be yummy on this, but I just used what I had on hand! Enjoy!

If I was fancy and classy I would garnish these babies with lime wedges, but I never seem to have lemons or limes on hand. Sad stuff. Also, as I type this my f%@&*$g terrible loud upstairs neighbors are stomping around like bears. I'm not a lightweight thin person, but I try not to jump around like a maniac and drive people to insanity. It's a courtesy.

I've seen so many fish taco recipes lately that it's really got me craving them!  These are no exception.

ooh I have a weakness for fish tacos. But I prefer mine with lettuce and tomato not the usual slaw that comes with them. yum!
