Lemon Chicken & Champ

Hi there! If you like sticky sweet ooey gooey chicken and potatoes, then grab a skillet and lets get cooking!



To make the chicken, follow the recipe here. The champ is really simple to make. Champ is the name for an Irish dish that is basically just mashed potatoes with the special addition of spring onions (scallions).

Champ
  • potatoes
  • butter
  • cream or milk or a combo of both
  • salt + pepper
  • scallions
Peel and cut your potatoes into small chunks. Cover with water and bring to a boil. Cook until tender. Drain, and place potatoes back into the pot to dry them out a bit. Add a couple tablespoons of butter and a splash of cream and mash up well. When fluffy and creamy, stir in your chopped onions. Serve immediately. Plate the chicken on top of the potatoes, and enjoy! I think the dish is extra good when you add a splash of your favorite red wine to the chicken, and have a glass while you're eating it ;-)
