Caramelized Onion Dip


Here's a quick and easy recipe that provides a nice alternative to the packaged dip for your summer pool parties! I made a small little batch that is good for 2 people, but this can easily be doubled, tripled, etc.

Caramelized Onion Dip
  • little more than 1/4 cup finely chopped onions (or more if you'd like!)
  • 1/2-1 tablespoon miracle whip or mayo
  • 6-8 tablespoons sour cream
  • 1/4 tsp. onion powder (or less, adjust to your liking)
  • 1/8 tsp. garlic salt
  • TINY pinch white pepper . . . I'm talking very teeny tiny, or none at all!
Add your onions to a stainless steel (or non-stick) sauce pan with a small amount of olive oil. Cook onions low and slow until caramelized. I used a 1/4 tablespoon of unsalted butter to de-glaze my pan. Let your onions cool, then add the remaining ingredients to a small bowl and mix well. Warning! Add the tiniest pinch ever of white pepper, or leave it out if you don't want it spicy. White pepper adds a ton of heat to whatever you're cooking, and it's a nice flavor in the dip but you don't want it to become a horseradish type flavor. Stir well to combine, and chill until fully cooled and ready to serve. Stir again before mixing.  



Once again, I feel like I cant stress this enough: SMALL tiny pinch white pepper. I absentmindedly added a dash while the onions were cooking and my mouth was burning when I ate this (which you can probably tell by the picture). Ouch! Best served with pretzels or potato chips, like Lays.
