Here's an incredibly simple and healthy recipe for a delicious breakfast or brinner. I love me some brinner. It's good stuff, and basically because who has time to make breakfast?! Why not make the best meal of the day at night! Especially when it's this simple. Grab your skillet and lets get cooking!
Brinner Scramble
- 6 eggs
- 2 pasilla or poblano peppers (the big dark green ones! name varies based on location)
- 1/4 red onion
- 1 russet potato (rinsed, do not peel)
- 1/2 package Jenny O turkey breakfast sausage (or whatever you want)
- cheddar cheese
- salt + pepper to taste
Preheat your broiler and heat a skillet over medium-high heat with a drizzle of olive oil and a 1/2 tablespoon of butter. Add your sliced potatoes, peppers, and onion and cook down until veggies are tender and potatoes are nearly fully cooked. In a separate pan, cook you turkey sausages over medium heat until crisp on the outside and fully cooked inside.
These are super easy to cook, you basically just have to slide the pan around for a minute or so until the sausage is browned. Let the sausage cool and drain on paper towels. Once it is ready to handle, chop into bite size pieces and throw in with the other ingredients. Whisk your eggs with a splash of milk or cream (optional) and add to pan.
Turn down heat to low, and begin to scramble the eggs while stirring in the other ingredient, salt and pepper to taste. You want to cook the eggs until they're almost fully scambled and then remove from heat. Top with cheese and place under the boiler for a couple minutes to brown up and melt the cheese. Unfortunately my pan is not oven safe so I transferred it to a casserole dish and topped with cheese.
