Low Calorie Strawberry Crisp

I bought a carton of strawberries and decided to make a quick and low calorie dessert for myself! You don't need many ingredients, it's totally delicious, and get this: only 94 calories plus a whole serving of fruit! (depending on size of berry! if you did a quarter cup of berries plus the topping it's about 98 calories)

Strawberry Crisp
  • 4-5 small strawberries, chopped
  • 1 Wasa multigrain cracker
  • 1 tiny pinch of rolled oats
  • about 1/2 tsp coconut oil
  • cinnamon, to taste
  • Stevia, to taste
Preparation & Cooking Instructions

Preheat oven to 350 F. In a small ramekin add the chopped strawberries and a sprinkle of Stevia. Mix it around. In a Ziploc bag at the cracker and crush into very small chunks. Add in a small pinch of oats, Stevia, and cinnamon. Shake it up. Next add the melted coconut oil and mix to combine, top the berries with the crumble mixture. Bake for 20 minutes or until the strawberries are hot and bubbly and the topping has crisped up.

Couldn't be easier, but seriously SO delicious. Enjoy!

sorry for the dark photos, this was around 9 pm!

Seriously! Who can feel guilty about under 100 calories? And it's a whole food, not some microwavable crap Betty Crocker thing.

The texture is fabulous! A good mixture of gooey and crispy/crunchy. Love it!
