I hope you're not tired of my breakfast ideas yet ;-) I calculated all the nutritional info (well, not all like sodium etc.) and I'm here to prove you can have a HUGE, filling, and delicious breakfast while still fitting into those skinny jeans. Okay I had to switch into yoga pants after I ate because I was so full, and I couldn't even finish my food!
Here's the breakdown for the ingredients I used:
- 1 whole small green bell pepper
- thick slice raw white onion
- 1 cup baby spinach
- medium slice of tomato, probably 3 tablespoons worth
- 1/4 cup of egg substitute (Egg Beaters wasn't on sale so I used store brand)
- 1 slice Orowheat double fiber whole wheat bread
- 1 wedge Laughing Cow light Swiss original
Yes, it is an enormous amount of food! Can you believe that's only 1/4 cup of egg? It's because I used a crazy amount of veggies, oh yums. Here's the nutritional information:
- 177 calories
- 27.2 grams carbohydrates
- 8.7 grams fiber
- 14.5 grams protein
- 3 grams fat (only 1 gram of saturated fat

Oh, those sugary drinks are terrible for you! I love them but I really watch what I eat so I can have my one a day (and then it's just a latte, though I used to have a White Mocha, which is like the most terrible one you can get). I love making omelets -- it's always one of my got-to meals for a busy evening. Yours look fabulous!

That breakfast looks awesome! I can't believe it's only 177 calories! Tomorrow when I go to the store I will be investing in some egg beaters or other egg substitute.
