Peanut Butter Chocolate Chip Cheerio Squares

Nothing beats a no bake treat that uses up extra ingredients. We buy Cheerios from Costco, which means two giant family size boxes. After a while Isla loses interest in eating them as a snack, and the majority of the Cheerios get stomped on and then vacuumed up. I wanted to use up some Cheerios and I had marshmallows in the pantry, and figured a Rice Krispie Treat inspired snack would be a hit!

Peanut Butter Chocolate Chip Cheerio Squares
     makes 16 squares, depending on size of pan
  • 3 cups of Cheerios
  • 1 Tbsp unsalted butter
  • 2.5 Tbsp peanut butter, I used smooth
  • 5 ounces of marshmallows* 
  • 1 Tbsp mini chocolate chips
  • 1 tsp sprinkles (optional)
*I used 6 jumbo marshmallows and weighed them to get the measurement. This is probably equal to about 18-20 regular sized marshmallows.

In a large glass or microwave safe bowl add the butter and peanut butter and cook until it starts to soften, took about 30 seconds in my microwave. Then add the marshmallows and cook until they puff up really big to show they're melted, about 60 seconds. Stir really well to combine, then add in the Cheerios and stir until the cereal is well coated. In a glass baking dish give it a spritz with non-stick spray and dump in the cereal mixture. Use a piece of saran wrap/parchment paper/a greased spatula or even your hands to press the mixture down flat. I sprinkled it with chocolate chips and then sprinkles for a pop of color. Let cool completely to set up, then cut into squares and serve! You can double or triple the recipe easily, and cut the squares bigger to give away as party favors, bring these to a party for the dessert table, or if you're like my family just eat them with every meal and they'll be gone in two days! Whoops!


Per square: 80 calories, 12 net carbs, 2.6 grams of fat, and 1.6 grams of protein.
