Sweet Lemon Gluten-Free Pancakes

Easy pancakes that taste just like the title says, sweet and lemony. This is a simple recipe that doesn't require too much prep, and the batter doesn't need to sit or thicken up like other gluten free recipes. I hope you enjoy this recipe as much as I do!


On a side note . . . We are in the process of buying a house! It's all very exciting, things have been crazy. Very crazy. Isla is almost 8 months old and crawls everywhere and gets into everything. Every. Thing. She's sassy and very determined. My husband has been working like crazy, and I've hardly been cooking. I am so looking forward to having a house with a nice kitchen to inspire me to cook again! I plan to have a garden so I can grow fresh veggies and herbs. Hopefully you'll be seeing a lot more of me around here, I sure do miss blogging.  If anyone out there is still reading, thanks for sticking around :)



Sweet Lemon Gluten-Free Pancakes
      makes 6 pancakes
  • 1-1/4 cups Almond Flour
  • 2 large Eggs, or 6 tbsp. of Eggbeaters Original
  • 3-5 tbsp. Splenda, or other sweetener
  • 3 tbsp. Heavy Whipping Cream, Milk, or water
  • 1 tbsp. Honey (optional)
  • 1 tbsp. pure Vanilla Extract or Vanilla Paste
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Baking Powder
  • juice of 1-1/2 medium Lemons
  • zest of 1 whole Lemon
In a large mixing bowl combine the dry ingredients and whisk to break up any chunks. Add all of the wet ingredients and stir until well combined. If the batter seems too thick you can add another tbsp. of cream or water depending on how thick you want your pancakes. Preheat a non-stick skillet to about halfway between medium and medium-low. Use a regular spoon to scoop the batter. These will spread and fluff up nicely, so it isn't necessary to measure out more than 1/8 to 1/4 cup per pancake. This should make 6 pancakes, which is three servings. Enjoy with butter and syrup!

Per serving (2 pancakes): 379 calories, 12 grams carbohydrates, 14 grams protein, and 31 grams fat. The carb count would be much lower if you subbed the honey for another sweetener such as a sugar free syrup, although the honey is optional altogether I just like the flavor it adds.
