Fiesta Chicken

This chicken is so flavorful you won't miss the extra calories! It's incredibly filling and only 154 calories!



Fiesta Chicken
  • Chicken breast, I used 117 grams of extra trimmed chicken escalope
  • Cabbage, 120 grams
  • Salsa, 2 Tablespoons
Preparation & Cooking Instructions

This dish comes together in about 7 minutes. I buy the pre-shredded bagged cabbage. It's best to use green, when you cook the red/purple cabbage the color runs. 

Season the chicken on both sides with whatever spices you prefer. I used salt substitute, Mrs. Dash table blend, a pinch of granulated garlic, and a pinch of granulated onion. Over medium-high heat saute both sides of the chicken to develop a nice brown color. Cover with a lid and reduce the heat to low, cook an addition 3-4 minutes. If you don't have a lidded pan, then simply reduce the heat to low and let cook until the juices run clear. Remove the chicken and set aside, cover with foil. In the same pan saute the cabbage, season with salt and pepper. Plate the cabbage, set the chicken on top, and finally add some salsa. Enjoy!!
