Fresh Machaca Breakfast



It's hard to eat a good breakfast during the week, let alone anything at all before 12 pm. Today we decided to make machaca since we had a ton of ingredients on hand already!


Fresh Machaca Breakfast
  • 2 bell peppers
  • 1 jalapeno pepper
  • 1/2 an onion
  • 3 eggs
  • 12 ounces pre-cooked canned roast beef (or any kind of meat you'd like, this would be great will leftover shredded steak)
  • pat of butter
  • salt + pepper to taste
Start by dicing up your veggies. Next up heat a pan over medium-high heat with a pat of butter, I like to let the butter brown slightly and develop and nice flavor before I add in the veggies. Add your veggies to the pan and let them cook down until almost tender. Scoot the veggies over to one half of the pan and add in your eggs. Scramble your eggs and just before they're fully cooked remove from heat and add in your meat. I had hubby drain the meat and break it up with the back of a fork. Stir to combine and serve! Traditionally this would be served as a burrito or with beans and tortillas. We just had it alone, plain and simple.

wow yummm!! my dorm room doesnt have a kitchen, which is a pain. oh, and i had a blender and it broke...
